I've setup a delayed publishing using a workflow as explained on this page, but I can not find any options to edit or delete items in "pending state". Does anyone know if this is possible?

Welcome to the eZ Community!
I believe this was a feature (or possible feature) using the various public forks and branches of the 4.x compatible ezapprove2 extension.

It really is ...
First, which version of eZ Publish are you using exactly here?
Second, where exactly (what url specifically) did you use to get your copy of ezapprove2
Also older branches and copies were 4.0 compatible in some regards but later became even more incompatible with the most recent versions of eZ Publish as it has not been as actively maintained by it's creator.
Lastly, what errors specifically are you getting what you try to do what exact actions, also please list your installation steps.

I'm using eZ Publish 4.5.0 and here's the error I get when trying to create a workflow:
Fatal error: Cannot make static method eZPersistentObject::definition() non static in class eZApprove2Event in /www/ezpublish-4.5.0/extension/ezapprove2/classes/ezapprove2event.php on line 286

Hello Fredrik T,
It's good to hear your using a recent release of eZ Publish 4.5
But you did not share which url you used to obtain your copy of eZ Approve2 extension.
FYI there are many very different public forks of this extension and if you can't share the location of where you obtained your copy then it makes it very hard to know what version of which fork your using ...
Please share the url of where you got your copy of ezapprove2

Ok, good to know.
I would suggest since your using a more recent version of eZ Publish
And because we know that without more work the ezapprove2 extension as distributed on projects.ez.no is not working for you ...
I think I would suggest you use git to fetch a copy of this more active fork of this extension which has been greatly updated.
